Poongar Red Rice Salad

Ingredients:

1 cup cooked Poongar Red Rice

1/2 cup chopped cherry tomatoes

1/2 cup chopped cucumber

1/4 cup chopped red onion

1/4 cup chopped fresh parsley

2 tablespoons olive oil

1 tablespoon red wine vinegar

Salt and pepper to taste

Instructions:

  • In a bowl, combine the cooked Poongar Red Rice, chopped cherry tomatoes, chopped cucumber, chopped red onion, and chopped fresh parsley.
  • Drizzle the olive oil and red wine vinegar over the salad and toss to coat.
  • Season with salt and pepper to taste.
  • Serve the Poongar Red Rice salad as a side dish or add some protein such as grilled chicken or tofu to make it a complete meal.

Electric rice cooker method:

Wash and clean the rice. Set the timer for 45 mts for rice in Electric rice cooker.
